Coconut Cashew Bites

I am always looking for healthy, tasty snacks.  I am a snacker.  Aside from dinner, I have to force myself to eat regular meals throughout the day, and to limit my snacking (so basically, I eat like a toddler).  Usually (when I'm not indulging) my snacks include a handful of raw nuts or a hard boiled egg, but those can get a little old after awhile.  In an effort to spice things up, I've been experimenting with nut butters.

Jamesie is obsessed with the blender.  I make myself a shake for breakfast every morning, and often I do so one-handed because Jamesie simply insists on being part of the action.  He especially likes to put the ingredients in the blender for me, and when it is time to mix everything together he knows the right button to push.  He dances to the sound of it chopping and blending together into one delicious meal.

Monkey Pancakes

A quick and easy "pancake" (or as my Father calls them, "looks like an banana omelet to me...") that are best at breakfast time or anytime of day snack.  I often make these for my son in the mornings (this morning in fact!) and I will take the leftovers out with us during the day to have on hand as a little protein boost.  They are somewhat dense, so I recommend them for 9m+
